  • 1 tbsp Olive oil
  • 1 Onion, chopped
  • 2 Carrots, chopped
  • 2 Celery stalks, chopped
  • 2 cloves Garlic, minced
  • 6 cups Vegetable broth
  • 14.5 oz Diced tomatoes undrained
  • 1 cup Green beans, trimmed and cut
  • 0.5 cup Corn kernels
  • 0.5 cup Peas
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp Fresh parsley, chopped for garnish

Method
 

Instructions
  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.
  4. Add green beans, corn, and peas to the soup. Simmer for an additional 5-7 minutes, or until the vegetables are tender-crisp.
  5. Season with salt and black pepper to taste. Ladle into bowls and garnish with fresh parsley before serving.

Notes

Feel free to customize this soup with your favorite vegetables. You can also add pasta or rice for a heartier meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days.
