Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter, melted
Filling
  • 24 ounces cream cheese, softened
  • 0.75 cup granulated sugar
  • 2 large eggs
  • 1 cup fresh strawberries, sliced

Method
 

Crust
  1. Preheat oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium bowl; mix until well combined.
  3. Press the mixture evenly into the bottom of the prepared baking pan.
Filling
  1. In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
  2. Beat in the eggs one at a time, ensuring each is fully incorporated.
  3. Fold in the sliced fresh strawberries gently.
  4. Pour the cream cheese mixture over the crust in the baking pan.
Bake and Chill
  1. Bake for 30-35 minutes, or until the center is almost set.
  2. Let cool completely at room temperature, then refrigerate for at least 4 hours before serving.
  3. Lift the bars out of the pan using the parchment paper overhang, slice into squares, and serve.

Notes

For best results, make sure your cream cheese is completely softened to avoid lumps in the filling. You can also garnish with extra fresh strawberries before serving for a beautiful presentation.
