  • 3 medium tomatoes
  • 2 medium cucumbers
  • 0.5 medium red onion
  • 0.25 cup fresh parsley chopped
Dressing
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Wash and chop the tomatoes and cucumbers into bite-sized pieces, then thinly slice the red onion and chop the fresh parsley.
  2. In a large bowl, combine the chopped tomatoes, cucumbers, red onion, and parsley.
Dressing and Serving
  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.
  2. Pour the dressing over the salad ingredients and toss gently to ensure everything is evenly coated.
  3. Serve immediately or chill for at least 30 minutes before serving to allow the flavors to meld.

Notes

For extra flavor, you can add some feta cheese or fresh dill to the salad. Adjust the seasoning to your liking.
