  • 2 cans canned cannellini beans rinsed and drained
  • 4 cups chicken broth
  • 1 can diced green chilies
  • 1 medium diced onion
  • 2 cloves minced garlic
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil

Preparation
  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Stir in minced garlic, cumin, oregano, chili powder, salt, and black pepper, cooking for another minute until fragrant.
Cooking
  1. Add chicken broth, cannellini beans, diced green chilies, and cooked chicken to the pot.
  2. Bring the mixture to a simmer, then reduce heat and let it cook for at least 30 minutes to allow the flavors to meld. Optionally, simmer longer for a richer flavor.
Serving

Notes

For an extra kick, add a pinch of cayenne pepper with the other spices. This chili freezes well for future meals.
